When I cook I try to use wholesome ingredients as much as possible. Brown rice instead of white. Wheat flour instead of white. Honey or molasses instead of sugar, etc.. If your family isn't used to eating in this manner, some of these recipes will help sneak in these alternatives without too much complaining! They hardly even notice. After a while they will come to enjoy these more natural foods a lot more than the substitutes!
With all my evening meals I try to serve a green salad and either a cooked vegie or some sort of fruit. I like to let the children help me with this since they want to eat what they prepare! Serving fruit as the dessert is a good way to add a special something to your dinner without a lot of sugar.
The presentation of your table and meal are just as important as the taste. Take a little extra time adding something special to the evening meal. Maybe serve the drinks in special glasses, add a little bouquet of hand-picked flowers (children are always eager to contribute to this), a nice table cloth or candle. Sit down together to eat (and I don't mean in front of the t.v.) this is a good time to catch up on everyone's day. Take advantage of those precious hours before they're gone.

Chicken and Rice Casserole
(oh so easy but very yummy!)
Preheat oven to 350 degrees!!
3 Cups Cooked Brown Rice (1 c. raw cooked according to directions on package)
1 Cup Celery, cut up
1 Can Cream of Celery Soup
1/2 Cup Chicken Broth from cooking the chicken
2 tsp. minced onion (this is optional)
3/4 Cup Mayonnaise
1 Cup Bread Crumbs (optional)
2 Tbsp. Butter, melted (optional)
Mix bread crumbs with butter; set aside. Mix all other ingredients, put in baking dish and top with bread crumb mix (you may also top with cheese). Bake for 30 minutes.

Broccoli & Chicken Casserole
Preheat oven to 350 degrees!!
1 Family Size pkg Frozen broccoli
1 Cup Mayonnaise
2 Cans Cream of Mushroom soup (you may use cream of Chicken or Celery also)
1/2 tsp. Lemon Juice
1/2 tsp. curry powder
1 Cup Grated Cheddar Cheese
Cook broccoli and layer on bottom of pan. Cover with cheese and chicken. Combine rest of ingredients and pour over broccoli, cheese and chicken. Bake, uncovered for 1/2 hour. I serve this over brown rice. Very delicious!

Macaroni and Cheese
Preheat oven to 350 degrees
Sauce:
1 1/2 C. thin White Sauce (1 1/2 times the recipe) 1 egg, beaten
1 1/2 C. shredded cheddar cheese 1 t. dry mustard
2 T. minced onion
1 1/2 C. macaroni, cooked, drained 1 T. butter
Directions:
Combine sauce ingredients in saucepan; mix well. Cook until thickened, stirring constantly. Stir in macaroni gently. Spoon into greased 2-quart casserole dish; dot with butter. Bake, covered for 20-30 minutes
Serves 6

Carrot Muffins
2 cups all-purpose flour
1 tablespoon baking powder
3/4 cup skim milk
1 egg, beaten
1/4 cup sugar
1/4 cup vegetable oil
1 teaspoon finely grated orange peel
1 cup carrots, grated
1/2 cup raisins
1/2 cup walnuts or pecans, chopped
Sift flour and baking powder into a bowl. In a second bowl, combine milk, beaten egg, sugar, oil and orange peel. Then gently stir in grated carrots, raisins and nuts. Add the carrot mixture all at once to the dry ingredients, mixing just until the flour mixture is moistened. Spray muffin pan with Pam or another non-stick spray and fill to three quarters full. Bake at 425 degrees for 20 minutes, til lightly browned. Makes 12 healthy and delicious muffins.

Pretzels
1 Package Active Dry Yeast
1 Cup Lukewarm Water
1 Tbsp Sugar
1/2 tsp Salt
2 Tbsp softened butter
3 Cups Flour, divided
2 Tbsp Baking soda - NOT for mix
Coarse Salt
Mix the yeast, lukewarm water, and sugar in a bowl, and whisk until the yeast is evenly blended. In a second, larger bowl, blend the butter with 1 1/2 cups of the flour. Add the yeast mixture and stir until blended, then mix in the rest of the flour. When evenly mixed, begin to knead the dough until it loses its stickiness. Let the dough rest and rise for about 20 minutes at room temperature.
Divide dough into 12 pieces and roll into ropes about 15 inches long on a lightly floured surface. Twist into a pretzel shape firmly pinching ends together. Let this rest, and rise for ten minutes. Meanwhile, heat a large wide mouthed pan of water to boiling, then add baking soda and reduce to a simmer. Gently place the uncooked pretzels into the water with a slotted spoon, a few at a time. Cook for about one minute on each side. Lift from water, drain, and place on a baking sheet. Sprinkle with coarse salt and bake in a 475 oven for 12 minutes until golden. Cool on a baking rack.

Chicken With Cream Sauce
Ingredients:
1 large chicken
1 stalk celery halved (with leaves)
1 small onion halved
4 sprigs parsley
2 whole cloves
1 carrot peeled and halved
1 tsp salt
1 small bay leaf
1/2 tsp thyme
water
Sauce:
4 Tbs butter
1 cup chicken stock
1/8 tsp pepper
1/2 cup cream
1/2 cup flour
1/2 tsp salt
1/4 cup chopped parsley
Instructions:
Put the chicken in the crockpot and cover with water. Add celery, carrot, onion and salt. Tie parsley, bay leaf, cloves and thyme in a small square of cheese cloth, add to the pot. Cover and cook on LOW for 7-9 hrs.
Melt 4 Tbs butter in a medium saucepan. Stir in flour and cook over low heat for several mins. Gradually stir in stock. Simmer until smooth. Add salt, pepper, parsley and cream. Remove chicken from pot, slice and serve with the creamy sauce.

Fussy Day Chicken
(extremely easy to prepare)
1 whole chicken
1 bottle of barbecue sauce
Wash and dry chicken, put in crockpot. Pour barbeque sauce in chicken cavity and over chicken. Cook on low all day. When ready to eat serve over rice.

Let's Make Homemade Paper!
Supplies needed
A Blender
Warm Water
Scraps of old paper torn into small pieces (Construction paper works best)
Small amounts of dryer lint for more body
Wooden picture frame (8"x10")
Window screen material 12" x 14" or so
Staple gun
2 large plastic dish pans or tubs
Clean rags (15"x15")
Old newspaper
Rolling Pin
Shears to cut screen
Optional: Chlorine bleach, dry leaves, flowers, sawdust, etc.
Directions: Place torn scraps of paper and warm water into a large pan to soak until saturated and soft. Meanwhile, stretch the screen over the picture frame and staple screen to the frame. Scoop out one cup of pulp into blender and add water to fill blender. Add 1/4 cup Chlorine bleach if you want pure white paper. Blend for a few seconds until smooth and mushy. Pour paper mush into large tub. Repeat several times until there is 5 inches of mush water in tub.
For texture and color add the following: fine sawdust, crumbled leaves, dry grass, dried fruit skins, dry flower petals, etc. Dip the screened picture frame under the mush; then holding the frame level, shift it back and forth until a layer of mush settles evenly over the surface. Make this layer about 1/2 inch thick. Lift frame carefully and allow to drain. If mush is clumpy or has holes, start over again. Place a clean rag over the top of this, and press down gently to squeeze out more water. Lay a few pieces of old newspaper down onto a table. Carefully turn the frame, wet paper and rag upside down, and lift off frame. Cover the wet paper with another rag.
Roll the rag/paper sandwich with rolling pin to press out more water. Carefully peel off the top rag. Turn the wet paper and bottom rag over onto either a smooth counter top or a piece of glass (paper side down), then peel off remaining rag. Leave alone until dry.
Suggestions: Use your new paper to make special cards, gift tags, books, etc.
